A Few Questions Pertaining to Anchor Text

Hi, this is my first post here, so please bear with me. I have recently took up SEO and a few questions have arisen. I thought this to the best place to ask:

When anchoring text, is it better to anchor just the keyword or the whole sentence?

I remember keyword stuffing to be a no-no but I have seen a lot of my competitors have dones exactly this. Is this a thing again?

Am I wasting my time writing endless articles on Wordpress and Blogger?
